Camp Breakfast: Bagels & Farmers Cheese

Hello fellow campers, we want to tell y'all how much we LOVE bagels. Our talented camp chef, Jeff Shu, whipped up this recipe a few weeks back and it was pure bliss. It's a slight obsession lately, due to how they fill us up for a good chunk of the morning. This is especially true when the A.M. involves a hiking trail or a beach-combing excursion.

The farmers cheese combines with the chives and lemon zest to give it a fancy twist that is simple and rewarding. Read on for the full recipe, and stay tuned for a few more solid camp cooking ideas from the talented Jeff Shu.

Camp Breakfast: Bagels & Farmers Cheese

Total Time: 5 minutes  

Serving Size: 2

Ingredients for the Bagels:

  • 2 Bagels
  • Farmers cheese*
  • 1 bunch Chives
  • Lemon zest from half a lemon

    *note: farmers cheese may be a bit un-spreadable straight out of the box.  We added a spoonful of yogurt for more spreadability. A more spreadable alternative to farmers cheese would be fromage blanc.

    Steps to Success:

    1. Finely dice chives
    2. Zest lemons
    3. In a mixing bowl, incorporate farmers cheese and ingredients from steps 1 and 2
    4. Generously spread on bagels
    5. Garnish with pickled shallots and oranges (optional)
